Spanish Membrillo (Quince Jelly) with Thermomix…Easy!
This gnarly fruit turns into a creamy Spanish holiday dessert with the help of a Thermomix. Quince apples, also known as Queen’s Apples, are a winter fruit that’s loaded with flavor and packed with pectin. When you let the Thermomix do all the work, you’ll end up with an easy, super flavorful treat to pair with Spanish manchego cheese and walnuts for a classic finish to a holiday meal.
Just 800 grams of quince apple, 650 grams of sugar, 1 lemon and a teaspoon of vanilla will make a beautiful block of Membrillo ready to pair with a cured Manchego Spanish cheese and walnuts. Yum!

In a Thermomix or a large saucepan, add the peeled and seeded lemon.
Add the quinces to the Thermomix or saucepan.
Set the scale to zero and add the quinces until it reaches 400 grams.
Add the same amount of sugar (300 grams or adjust to taste).
Secure the lid of the Thermomix or saucepan.
Set the temperature to 5 and increase it to 10.
Allow the mixture to cook until the bell rings, indicating it is done.
Reserve the cooked mixture to the side.
Repeat steps 1-8 with the remaining quinces, lemon, and sugar.
Add the reserved cooked mixture to the new batch.
Add a teaspoon of vanilla extract to the mixture.
Set the temperature to 100 degrees Celsius and cook for 30 minutes at a speed of 5.
After 30 minutes, remove the lid and scrape down the sides if necessary.
Cook for an additional 15 minutes at 100 degrees Celsius and a speed of 5.
Remove the lid and let the mixture cool slightly.
Pour the mixture into a lightly oiled glass dish.
Smooth out the mixture and let it cool completely
Cover the dish with plastic wrap and refrigerate for at least 4 hours.
Once chilled and solid, remove the jelly from the dish and slice it into rectangular shapes.
Serve the membrillo jelly with walnuts and aged manchego cheese.
