Teleme Goat Cheese & Tomatoes
Any goat cheese will do justice to this simple appetizer but if you can find the briny, creamy Teleme, you’ll really be in luck! It’s so simple to put together a platter of these little two-bite appetizers that everyone will be asking for more… and you can do it in a minute!
Ingredients
cherry tomatoes, sliced in half
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp garlic powder
1 tsp dried tarragon
1 cup teleme or goat cheese, crumbled
lemon zest
1 cup yogurt
2 tbsp olive oil
Instructions

Preheat the oven to 450 degrees.

In a baking dish, drizzle the cherry tomatoes with 1 tbsp olive oil, balsamic vinegar, garlic powder, and dried tarragon. Stir to coat the tomatoes evenly.

Bake the tomatoes in the preheated oven for 20 minutes, or until they are soft and slightly caramelized.

In a food processor, combine the crumbled teleme or goat cheese, lemon zest, yogurt, and 2 tbsp olive oil. Process until the mixture is silky smooth. If needed, add a bit of milk to achieve the desired consistency.

Transfer the cheese spread to a serving dish and garnish with additional lemon zest, if desired.
