Classic Lemon Garlic Dressing
Dress it up or dress it down, this little salad staple can go pretty much anywhere you want it to. If I only had one dressing to take with me to a deserted island, this would be it!
Ingredients
1/4 cup lemon juice
1 garlic clove, minced
1 tsp Dijon mustard
pinch of sea salt
freshly ground pepper, to taste
tiny bit of thyme leaves
1 tsp honey
1/3 cup extra virgin olive oil
Instructions

In a small jar, combine the lemon juice, minced garlic, Dijon mustard, sea salt, freshly ground pepper, thyme leaves, and honey.

Mix the ingredients until well combined and the honey is dissolved.

Slowly drizzle the extra virgin olive oil into the jar while continuing to whisk.

Keep mixing until the dressing is well blended and emulsified.

Taste and adjust the seasonings, adding more salt, pepper, or lemon juice if desired.
