Walnut Arugula Pesto Pasta

Ingredients
1 cup walnuts
2 garlic cloves, minced
1 cup extra virgin olive oil
juice of 1 lemon
1 cup grated parmesan cheese
1 tsp sea salt
4 cups fresh arugula
Instructions

Preheat the oven to 425 degrees.

Place the walnuts on a baking sheet and roast them for 5-7 minutes, until fragrant and slightly golden.

Remove the walnuts from the oven and let them cool.

In a food processor, add the roasted walnuts and minced garlic. Process until roughly chopped.

Slowly pour in the extra virgin olive oil while the food processor is running.

Add the lemon juice, grated parmesan cheese, and sea salt. Process until well combined.

Add the fresh arugula to the food processor and process until the pesto reaches a thick consistency.

Taste and adjust the seasoning if needed.

Transfer the walnut pesto to a jar or container and store it in the refrigerator until ready to use.
