White Bean Garlic and Rosemary Dip
Hummus is pretty much a go-to dip everywhere in the Mediterranean, but this garlicky white bean dip with fresh rosemary can hold its own too. The trick to the rich but smooth garlic flavor is to use roasted garlic paste instead of raw garlic, but you’ve got options. If you’re looking for sharp and tangy, just add 2 cloves of fresh minced garlic instead of the roasted paste.
Ingredients
1 tablespoon fresh rosemary, minced
2 tablespoons roasted garlic paste or 2 fresh cloves
2 cans (15oz each) rinsed and drained white beans
1 lemon, juiced (about 3 tablespoons)
¼ cup extra virgin olive oil, plus more for garnish
sea salt, black pepper, chili pepper flakes to taste
1-2 tablespoons hot water

Finely mince the rosemary in a food processor.

Add the remaining ingredients and blend until smooth and creamy.

Season to your taste and chill for a few hours to allow the flavors to marry together!
