Winter Beets & Oranges Salad
If you’re looking for a colorful and healthy way to brighten your day, this Mediterranean-inspired beet and orange salad recipe is just the trick. Packed with healthy greens, anti-oxidant reds, vitamin C oranges, this is it! And what could be better than making the most of fresh winter greens like kale and Swiss chard, winter veggies like beets and winter fruits like oranges? Add some pistachios for crunch and you’ve got a great salad for lunch.

Preheat the oven to 400 degrees Fahrenheit.
Double wrap the beets in aluminum foil to ensure even baking.
Place them in the oven for approximately 45 minutes.
Meanwhile, prepare the vinaigrette.
Peel and thinly slice strips of lemon and orange.
Slice the oranges into half-inch rounds, squeezing out the juice from the ends for the vinaigrette.
Wash and dry the Swiss chard or kale, then cut it into one-inch strips.
Dice the pistachios and slice the fresh parsley.
In a bowl, whisk together the olive oil, lemon juice, red wine vinegar, chopped capers, sea salt, and pepper to create the vinaigrette.
Add the slivers of lemon and orange peel and let it marinate.
Once the beets are cooked and cooled, scrape away the skins, trim the bases, and slice them into thick rounds.
Lightly coat the Swiss chard or kale with some of the vinaigrette.
Begin plating the salad. Start with a layer of Valencian oranges as the base.
Arrange the beet slices around the oranges, creating a colorful display.
Add extra beet slices in the center.
Top the salad with blood oranges for their unique flavor.
Sprinkle the chopped pistachios over the salad for added crunch.
Drizzle another layer of vinaigrette over the top, allowing it to soak into the beets and oranges.
Finish the salad with a sprinkle of fresh parsley.
